Basic Waffles with cheesecake topping

Another waffles recipe .. however this time it is sweet and with a cheesecake topping. A cheesecake topping .. I know it sounds strange! Last weekend, I wanted to try something different. I wanted to make something related to cheesecake (since my blog is named cheesecake for all). NOT a cheesecake, just the flavor of a cheesecake is added to my breakfast. While searching, I found this cheesecake topping recipe, which is made to be used with any basic waffles recipe.

In fact, I didn’t try any basic waffles recipe before. I used to buy the eggo waffles and enjoy eating them every day in the morining before going to work. Even after buying the waffles iron, I didn’t think of trying to make a basic waffles. I tried different and unique kind of waffles such as Chocolate Cinnamon Waffles and Three Cheese Waffles. But to make a basic waffles recipe and posted here wasn’t so attracting idea till I found this topping out there and decided to give it a try!

I couldn’t imagen that I would find a basic waffles recipe that will beat the eggo waffles I used to eat before. However, this recipe proved that I know nothing about how delicious waffles could be! I ate every piece with eagerness for more and more. I couldn’t stop until the plate became completely empty.

Each time I make the waffles I get very big pieces, this time I decided to make something different! I wanted to get meduim sized rounded waffles. Basicly I wanted my waffles to look and taste good as well. I poured the waffle‘s paste at the middle of the waffle iron without felling it with paste. The result was amazingly awesome, as expected , no much better than expected.

I got the size I wanted with a delicious taste more than eggo’s. You can use the waffles recipe with any kind of topping you want. It is up to you. However, the cheesecake topping is so good and can be done with different flavors as well. Here, I have used blueberry. Strawberry and blackberry can be added and used as well.

Basic Waffles with cheesecake topping

Waffles recipe adapted from allrecipes.com. Cheesecake topping adapted from recipezaar.com

Waffles Ingredients
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Cheesecake Ingredients

1/2 cup cream cheese
1/4 cup powdered sugar
1/4 tablespoon lemon extract
1/2 cup simple syrup
1/2 cup fresh or frozen berries

Making the Waffles

  1. Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
  2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

Making the Cheesecake topping

  1. Whip together all of the Cheesecake filling ingredients, except the blueberries. When assembling the waffle fold the blueberries into the filling.
  2. Fill the waffle with heated cheesecake waffle filling.
  3. Place one more waffle on top, and dust with powdered sugar, and serve with whipped butter and more cheesecake filling on top.

I haven’t had a waffle in like 10 years, but I think that is going to change this weekend. These look amazing!
