Guacamole Goat Cheese Rolls

This week was the week of cheese and everything around me was about cheese! Seriously, while I’m driving home I would dream of the lunch meal which somehow should contain cheese. For a light snack it would be a small portion of white cheese. For breakfast, the cheese again will be there. My raw lifestyle was totally ruined last week, because of the cheese obsession.

I told myself, it is normal, maybe my body needs some calcium, or maybe because of the new medication I’m taking, blah .. blah .. blah. Which now, I could say that these were just excuses. I’m not feeling regret for what I have done. However, it is good to analyze your behavior and understand yourself as well.

The first time I tasted these goat cheese slices I couldn’t resist not finishing the whole packet all at once. The taste with some tomato and bell pepper was unbelievable. In fact, I love to eat this kind( cheese, tomato, bell pepper, cucumber, olives .. etc) of food specially for dinner. It is healthy, fulfilling, and you will feel light even if you have eaten the whole plate by yourself.

When I bought goat cheese slices again I decided to make an experiment of mine. make the cheese slices as rolls and fill them with guacamole. And garnished with dry mint on top.

Guacamole Goat Cheese Rolls

Guacamole recipe adapted from All Recipes.

Ingredients

8 thin slices goat cheese @ room temperature

1 avocado, peeled and mashed

1/2 lime, juiced

1/2 teaspoon salt

1/4 cup diced onion

1 1/2 tablespoons chopped fresh cilantro

1 tomato

1/2 teaspoon minced garlic

Small pinch ground cayenne pepper (optional)

Making the Guacamole

In a medium bowl, mash together the avocado, lime juice, and salt. Then add the onion, cilantro, tomato and garlic. Stir in cayenne pepper and refrigerate for one hour for best flavor.

Using a small spoon fill each each cheese slice with small amount of guacamole and roll it. Place the rolled goat cheese in a serving plate and garnish with dry mint. place in fridge for 30 minutes or serve immediately.

Goat cheese slices? I thought I knew all there was to know about goat cheese – but I’ve never seen or heard of these!

dear Cara, If you want you can by a bulk piece and cut it into thin slices

I found them in the supermarket, I’m not sure about the name, however what I know that it was imported from Holland .

Oh my I have got to try these. I love putting goat cheese in everything I can but I’ve never had it like this before! I can’t wait to try it. :)
