Feb, 25th is one of the most special days for Kuwait and Kuwaiti people. Celebration is held everywhere by everybody. The joy touches everyones’ heart, and draws a smile on their faces. Two weeks ago, Kuwaiti flags started to appear on the top of different buildings, houses, malls, complexes, towers, etc. Today it is so common to notice these flags hanged on most of the houses in all the areas and in every street. You cannot miss a street without noticing the huge lights that are shape the Kuwaiti flag glowing with pride.In fact, it’s more than pride, it is a bliss.
Kuwaiti flag is available everywhere and on almost everything .. If you want to buy a Kuwaiti flag hat or a dress it’s available. You can also find accessories or whatever it is with the main four colors .. Black .. White .. Green .. and Red.
In 1897 Sheikh Mubarak Al-Sabah, president of Kuwait, asked for British protection to prevent the country from the dominance by the Ottoman Empire, Turks at that time. Since then Kuwait, which is an independent country, became under the British protection and continued to be till 1961.
On June 19, 1961 Kuwait declared its independence, and the relation between Kuwait and the Great Britain changed from protection-ship to a friendship.
There was a reason behind shifting the original National day to Feb 25th. The reign of Sheikh Abdullah’s Al-Salem was so central to the evolution of modern Kuwait. As a gratitude of what he has done to his country and his people, the national day became the same day which he had ascended the throne in February 25, 1950.
Feb 26th, is another day to celebrate. Well, it is another happily ending story. In this date, the Iraqi invasion on Kuwait ended. Again Kuwait became independent free country. And it’s people came back to their country, land and home safe and happy.

Pistachio cup cakes
Usually here, in the gulf area most of the traditional desserts contains dates, pistachio, saffron, walnuts, almonds or cardamom as main flavors, ingredients. Therefore, whenever I find a cupcake recipe contain some of these ingredients I don’t hesitate to try it .. it will always taste good that’s for sure.
Ingredients
5 eggs
1 cup icing suger
1 teaspoon vanilla extract
3/4 cup oil
1 cup ground digestive biscuit
1 cup ground pistachios
1 1/2 tablespoon baking powder
1 teaspoon ground cardamom
Making the cup cake
Preheat the oven to 350°F. In a larg bowl mix both the dry and liquid ingreadients together until the mixture is homogenized very well. Divide the batter into the molds, you can use muffin cups, then bake in the oven for 20 to 30 minutes or a tester inserted into the center of cupcakes comes out clean.
Remove the cup cakes from the oven and keep aside to cool for 5 mintues. Then turn them out on a wire rack to cool completely. For garnish sprinkle the icing sugar on the surface of the cup cakes, although I didn’t do this step I mentioned here.

Today is National Pistachio Day in the US. Not anywhere near as important as Kuwait’s National Day, but it makes an excuse to try Pistachio cupcakes.

The food holiday system is really strange, but generally goes unrecognized. I’m a food dork, so I love the fact that some random foods get their own day. Yesterday was National Clam Chowder Day AND National Chocolate Covered Peanuts Day.
