Date cupcakes

You don’t know how preoccupied I could get when surrounded by books; entering a book store is something I prefer to do alone. Whenever I decide to go shopping for books that means I have to buy some, even if there is nothing specific in my mind. I have started reading from very young age. My father used to give me some short ,but rich in meanings, novels whenever he saw me free and my homeworks are done! I liked it. Beginning in the main character shoes and face whatever adventures he/she facing is something fascinating and I really loved it. To be thrilled while reading and continuing without stopping to the end of the story ,specially the ones with good and happy endings, is my favorite chapter.

What I like most about reading novels is to see how much creative and talented the author is. For some authors while I’m reading their books I just ask my self how he/she imaged it ? How this idea came to hem/her? How did he/she could think of that?

In my opinion I prefer reading more than watching TV , although I have 32 inch LCD SONY in my room, that’s because of the limitation in the movie even if it is directed very good. You know, your mind has no limitation so you can imagen every small detail mentioned in the book. The sounds, weather, characters, places etc. and you will read the full story whether it is short or long.

I had three dreams in my life which are: the first have a loving family, the second live in a very naturally beautiful place, and the third write the greatest novel ever. Wish that they will come true one day.

I am on a vacation right now and for three weeks! Sounds good isn’t it? My plans for it were focused on trying as many new recipes as I can, also improve the cheesecakeforall as possible. Now I’m challenged, I just bought the Twilight saga collection, which seems to be interesting, in fact I like this kind of books. Therefore, I have two choices and I don’t know which to choose. Either I go for reading the whole day so I can finish the complete set before I return back to work, after finishing I can start my new recipes plan. Or to divide my day into two periods, day time for preparing recipes and keep the reading for the night. Which one is best I’m not sure? can you help me with your opinion?

The only thing that I can say about it is, when I put the plate I found it empty within seconds! it is that delicious ..

The cupcakes

3 eggs

3/4 cup brown sugar

1 teaspoon vanilla extract

3/4 cup oil

1 1/2 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 tablespoon ground cinnamon

1 teaspoon cardamom

1 cup of dates, seeded

1/2 cup walnuts

* keep some walnuts to the end for garnish, number of walnuts needed depends on the number of the cupcake you bake.

The toffee

1/4 cup brown sugar

1 tablespoon butter

1/2 cup thick cream


Adjust the rack to the top of the oven and preheat the oven to 356 °F. Butter and flour a 12-cup muffin tin, or line the tin with paper muffin cups. In a medium bowl whisk the eggs with sugar until the mixture thickens, then add the oil and the vanilla to it. In another medium sized bowl sift together the flour, baking powder, baking soda, salt, ground cinnamon and cardamom. Blend the dates, walnuts with one cup of hot water using a blender till full mix.

Alternately, add the dry mixture and the mashed dates to the previously prepared egg mixture. Bake for 25 minutes, or until the tops are slightly golden brown and the cupcakes feel springy when gently pressed. You can use a tooth picks to check if your cupcakes are done or not, just insert it in the middle of any cupcake randomly and take it out, if there is nothing stuck to it that means your cupcakes are done. Leave the cupcakes to cool before adding the toffee on top.

For the toffee, place the sugar in a pan on a medium heat without stirring till the sugar changes color and starts to caramelize. Then, stir with a wooden spoon and reduce the heat, add the butter and stir until dissolved then add the warm thick cream to it. Continue stirring until all the clumps are dissolved. Garnish with toffee and walnut.

A warning about those Twilight saga books…you can’t put them down once you start and they’re such a quick read you’ll be done in no time (they’re sooo good!). =)

Adorable cupcakes, they look very tasty. As for the book thing, I always read at night, mainly because if I don’t I will spend the entire day reading and not doing anything else!

how many cupcakes does this recipe make? do you know how many mini cupcakes it would make?

Hi Maryam, its really depend on the size of the paper cups you are using! therefore, it varies and I can give exact number. for me it maid around 40 cupcakes. hope this helps

Wouldn’t the cupcake burn on top rack of oven. Mine did :(

Hi Nida,

I think what you have done is that you turned on the top of the oven not the bottom! If your oven have its source of heat in the top then place the cupcakes in the bottom.

I tried this recipe today using white sugar instead of brown sugar. It was sooo testy and delicious and full of nutritions. It is good for breakfast.
