Do you have any special dishes for Saturdays’ or Sundays’ breakfast ? I have ! but for Fridays. Since the weekend in Kuwait starts on Friday, thats why I have Fridays’ special breakfast. Usually my breakfast will be one of these three choices .. eggs, pancakes or cake and tea with milk.
Before each Friday comes, I will start to search for a new recipe whether it is an egg, or a pancake or a cake. But most likely it will be new egg recipe! I think that’s because making eggs is more easier than making cakes or pancakes, especially when you are trying a recipe for the first time. Of course, you don’t want to face any failures which means no breakfast after a long hard working week.
For the cake, I can enjoy eating them on Fridays if I had made them one day before, if and only if I got good results “by luck”. For the pancakes, I have tried some good recipes but till know I didn’t get the one I’m looking for. In my last visit to sugarland TX, I went to Ihope restaurant where I ate the best pancakes ever. Well, I tasted the same pancakes in Quality Suites where I staid in Montreal last year and they were also so good.
While roaming in the internet searching for a Friday recipe I found the One eyed Egyptians in the Monkey see Monkey Do blog. From the first sight I knew that was what I’m looking for. Easy to implement, few ingredients which are usually available in your kitchen and the most important thing that it is an egg recipe!
The pictures in the post where so helpful, and the steps were so clear and understandable. And the taste was “delicious” . Thank you Dmarie for this wonderful recipe.
Ingredients
1 egg
1 piece of bread (i have used bread with cinnamon as an extra flavor)
1 1/2 tablespoon butter
salt and pepper
Making the egg
Butter both sides of your bread. Using small glass, make a hole in the middle of the bread. As Dmarie advised, make sure to use small glass, because big hole will cause the bread to rip while cooking.
Over a medium heat, melt the butter and place the bread with hole in it. Also place the left over hole (which will also have butter on it) in the pan beside the bread, and let lightly brown on one side. Lightly, because you will be turning it back onto this side to finish cooking off the egg, so you don’t want to burn or overcooked it this time around.
After flipping the bread add small amount of butter or spray into the middle of the hole. That will ensure non sticking of the egg in the bottom of the frying pan. Break the egg and remove half of the white before pouring it into the middle of the hole “I have add this step since I noticed that the hole was small to handle the whole egg”. Leave the yolk intact, so that it ooze when you start to eat it. Or if you prefer your egg well down cooked just break it instead.
Flip back over to the original side to finish cooking the egg. Serve it with the toasted hole. I have added salt and pepper at the end although Dmaries didn’t mention that. So it is up to you!
P.S Even if the bread breaks or the egg breaks, it will still taste wonderful!

My mom calls these Bunnies in a Basket. I started using a bat shaped cutout when my son was young so we starting calling them Bat in a Basket.
