Today I’m officially 26 years old. I remember in my childhood that I used to think “what would people do throughout their lives living so many years? how could my father and mother live for so long without being bored?” I couldn’t imagine that one day I’d even reach twenty! Now when I remember that I start to laugh .. and the funny thing that I was quite right ! what did I do with all these years? did I really enjoy every second of living ? did I appreciate every moment in these past years? or did all these years pass like a blink and here I am a 26 years old?

Well, to be honest “which is a difficult thing to do with yourself” the answer is a mixture of the questions that I mentioned before. My life was a combination of enjoyment versus boring, happiness versus sadness, wanting to live versus wanting to die .. and so on. I believe that it is not just me who felt like that! all of us have faced similar situations in our lives. There is no such thing called complete happiness or complete sadness type of life. Every one of us has his own good and bad memories, and that’s healthy as I believe.

Good memories push us to continue living in this world, try our best to reach another good memory. Bad memories give us sympathy, wanting to help and share .. give and feel .. be human beings !! If you did not face a situation that makes you feel sad at least for seconds you will not appreciate being happy.

Appreciation is a precious thing to learn and to have. I really appreciate every moment in my life and I’m not sad or disappointed that I wasted some valuable hours and days in my life. What I have learned from that was much more important than the time itself. I appreciate every good or bad moment, second, hour or even a day.

Some people wish that they can return back to the past and live again their childhood. But I’m not! The idea is that every age has its own benefits and disadvantages. Nothing is perfect! the perfection comes from adapting yourself with what you are and live the moment. Although I’m an adult now but I still have the feeling of a kid. Sometimes I tell my mother how inserting to feel like I’m just an 18 year old girl.

I noticed that, while people become older they disconnect themselves from the childhood feelings which is not a right thing to do. The more you are attached ”with conscious“ to your feeling as a kid the more you will enjoy life and understand your kids as well. The difference between childhood and adulthood is the consciousness. But what we are doing now is a full separation, between us and our reality.
The end of this long philosophic story is HAPPY BIRTHDAY TO ME

I didn’t know what exactly the name of this dessert. I learned it from my cousin “Maryam” a year ago. Since that time and till now, each time I make this dessert and put it on the table it will disappear within seconds. The good thing about it is that, it’s easy, fast and delicious. In our family, the tradition in any birthday is to buy a cake from the bakery and celebrate. I wanted to make this birthday different. So I decided to make my own birthday dessert, I thought of something all my family would like. And here it is, the chocolate balls dipped in cheesecake sauce as I call it. My advice is try it, and have a bite!

For the ingredients you will need
3 Nestle original cream (170 grams each)
300 grams Biscuits
30 grams crème cheese
1/2 cup sugar
1/2 cup powdered milk
125 ml thick cream
1/4 cup Nestle Nesquik (add more if you like it darker/ you can use any kind of chocolate powder)
1/4 cup water
chocolate balls
Using a food processor, crush the biscuits into very small pieces. In a big bowl, put the crushed biscuits and add the Nestle cream. Mix with a table spoon thoroughly. Then add the Nestle Nesquik (or any kind of chocolate powder) and mix again. All the mixture should have one homogeneous color. Using your hands, shape small balls from the mixture and place it in a big plate. When you finish insert tooth picks inside the balls. These picks will make it easier for you and your friends or guests to take one ball each time. Put the chocolate balls in the refrigerator until you finish the white sauce.

Now in a blender mix the following: powdered milk, sugar, thick cream, half of the water and the creme cheese for 30 seconds. Check the thickness of the sauce if it is very thick then add the other half of the water (if it is not very thick, don’t add the remaining water) and blend again. Pour the white sauce over the chocolate balls and put it in the refrigerator for 5 minutes. Your recipe is done.
enjoy with love,
Maryam
